A SINGLE PARTNER THROUGHOUT THE WINE PROCESS
Convinced that preventing is better than healing, we accompany wineries in the management of their vineyards. The planning of the crucial phases for the cultivation of the vine, from the choice of rootstock and variety to the drafting of fertilization and defense plans, is developed together with the customer, also based on the needs of the cellar, to reach the best compromise between yield and quality of the grapes. We work with the view of enhancing the well-being of plants and of the environment, making the most of the synergy between natural substances and synthetic substances to minimize the ecological impact of crops.
We guide the customer towards a cutting-edge, leaner and more aware winemaking process. We pay great attention to customer needs, to compliance with production regulations and organic and NOP regulations, without however compromising in obtaining high quality wines. Together with the wineries, we analyze the entire winemaking process to optimize and improve it, identifying the oenological products most suited to their needs, correcting any deviations or problems, and thus structuring customized protocols for customers.
RESEARCH AND SELECTION OF NATIVE YEASTS
Our goal is to provide wineries with autochthonous yeasts selected to produce quality wines, which do not conform to the market and stand out in the wine scene, exploiting the unexpressed potential of the indigenous strains of their vineyards. Through our microbiological and technological skills, we optimize what nature expresses in the traditional spontaneous fermentation of musts avoiding, however, defects and deviations.
MICROVINIFICATIONS FOR THE IMPROVEMENT OF WINE QUALITY
Service designed to test together with the customer, on small quantities, the use of new clones, yeasts or particular winemaking protocols and the most suitable wine products to enhance their wines, enhancing their technological and organoleptic properties. Thanks to the internal analysis laboratory, the tests are constantly monitored, allowing us to provide more details, useful for understanding the results. Tasting panels are also organized with expert enologist and technicians.
